
The story of Bailetti begins in 1982, when Salvattore Bailetti, an Italian immigrant with a strong entrepreneurial spirit, crossed the Pacific Ocean carrying little more than a suitcase and a dream.
After a long journey filled with challenges and new beginnings, he arrived in Peru, eventually settling in the fertile region of Ica, a land internationally recognized for its vineyards and long tradition of grape cultivation.
Recognizing the extraordinary potential of Peruvian grapes, Salvattore Bailetti envisioned something greater than simply producing beverages. His goal was to create products that honored the land, respected local traditions, and reflected the highest standards of quality.
Driven by this vision, he founded Don Salvattore S.A.C., a company dedicated to the production of premium piscos and wines. From the beginning, the mission was clear: to develop the full potential of Peru’s vineyards through careful cultivation, traditional distillation methods, and strict adherence to regional production standards.
Through dedication, discipline, and respect for the environment, the Bailetti project steadily grew. What began as a bold entrepreneurial initiative soon became a recognized name within the community of Ica, known for its commitment to quality and authenticity.

Each bottle of Pisco Bailetti is produced in our modern industrial plant, equipped with state-of-the-art technology, such as stainless steel tanks and LPG-controlled fermentation.
We use both Peruvian and French stills, ensuring that every step of the process honors Peruvian pisco-making traditions.

Peruvian pisco is an ancestral grape brandy, originating in the 16th century after the arrival of Spanish vines in Ica, Peru. Its production became established in the Pisco region, using local distillation techniques. It is a pure grape distillate, without additives, and constitutes Peru's cultural heritage and national drink.
